Guacamole

Guacamole is one of my favourite things to make - it is incredibly quick and easy to prepare, it is delicious, and it is filled with so many skin-loving nutrients and beauty foods that you really can't go wrong. I like to make up a big batch and enjoy some with corn chips and veggie sticks, some to top off a burrito bowl that night and some on sourdough toast with poached eggs for breakfast the next morning. Might be a bit overkill, but I don't think there is such a thing...

Ingredients

4 ripe avocados

1/2 lime, juiced

1/2 red onion

Small bunch of coriander, leaves and stems

200g grape or cherry tomatoes

Jalapeños, fresh or pickled, to taste

Guacamole ingredients, red onion, avocado, tomato, salt, coriander and jalapenos arranged neatly on a concrete countertop

Method

STEP 1
Halve the avocados, remove the seeds and scoop out the flesh into a bowl or mortar & pestle (or molajete).

STEP 2
Mash the avocado using a fork, potato masher or pestle (or tejolote) to your desired consistency.

STEP 3
Add the juice of half a lime and salt to taste.

STEP 4
Dice up the tomatoes and red onion and add to the avocado mix.

STEP 5
Finely chop the coriander, add to the avocado and combine well.

STEP 6
It is optional but you can add some sliced pickled or fresh jalapeños to taste.

STEP 7
Top with extra coriander.
