Saffron Porridge with Pistachios and Chia Seeds

Porridge is a convenient, quick and nutritious breakfast staple for so many people. It can get a little boring though with the same simple flavours and toppings. Adding a bit of saffron brings such an incredible and unique flavour that helps to jazz up this breakfast staple. We have also topped it with some more skin-loving foods like chia seeds and pistachios to bring you a tasty and healthy way to start the day.

Ingredients

1/3 cup traditional rolled oats

1/2 cup water

1/2 cup milk of choice

2 tsp chia seeds

30g raw or roasted unsalted pistachio kernels

1 tbsp sultanas

1/4 tsp saffron

Optional: drizzle of maple syrup

Method

STEP 1
Combine the oats, water, saffron and sultanas in a saucepan and bring to a boil before reducing the heat to low and stirring until the water has been absorbed.

STEP 2
Add the milk of choice and a drizzle of maple syrup if desired, stir till combined and the milk has been absorbed. You can add more water or milk depending on your preferred consistency.

STEP 3
Pour into a bowl and top with chia seeds and pistachio kernels.
