Salted Coconut and Cacao Bliss Balls

These bliss balls are such a simple and quick recipe that offers a fibre-rich sweet treat. The combination of dates, cacao and coconut works perfectly. Typically I find bliss balls too sweet but the addition of salt balances it so well. As the name suggests, I roll them in coconut but you can use anything you wish! Chia seeds, crushed pistachios or cacao powder all work beautifully.

Ingredients

200g Medjool dates, pitted

3/4 cup blanched almonds

1/4 cup raw cacao powder

1/3 cup shredded or desiccated coconut + extra for rolling

1/4 cup coconut oil, melted

3/4 tsp salt

Bliss ball ingredients, including dates, blanched almonds, cacao powder, salt, coconut oil and desiccated coconut arranged separately in bowls and plates, on a pink marble tabletop.

Method

STEP 1
Place the blanched almonds into a food processor and blitz for 10-20 seconds until finely chopped.

STEP 2
Add the pitted dates, coconut, coconut oil, salt and cacao powder and blitz for about 30-60 seconds or until the dates have been broken down and the mixture comes together.

STEP 3
Place some shredded or desiccated coconut onto a plate or shallow bowl.

STEP 4
Roll level tablespoons of the mixture into balls. Wet your hands if it gets too sticky.

STEP 5
Roll in the coconut and store in the refrigerator in an airtight container to allow the bliss balls to harden slightly.
