Spelt Flour Banana Bread

When it comes to health, balance in all aspects is key! Sweets and desserts that are good for the soul can and should absolutely form part of a healthy, balanced diet. For me, the smell of banana bread baking in the oven on a cold winter's day is something that brings so much comfort and joy. So I had to include a banana bread recipe as my first sweet on The Skin Insider, with this recipe using a wholegrain spelt flour for some additional fibre. I also use less sugar than most recipes, with my choice being panela sugar because of the beautiful caramel-flavour it imparts. However, sometimes I even forgo the sugar altogether because the sweetness from the ripe bananas and chocolate chips is often enough for me - give both a try and see what you prefer. The walnuts add a delicious crunch and nutty flavour in addition to a host of skin-loving nutrients.

Ingredients

4 medium very ripe bananas, peeled

2 cups spelt flour

75g unsalted butter, melted

1 large egg, beaten

1/2 tsp baking soda (not baking powder)

1/2 cup panela sugar or sweetener of choice

1/3 cup chocolate chips

1 cup raw walnuts, chopped roughly

Pinch of salt

2 tsp vanilla extract

Method

STEP 1
Preheat your oven to 180°C and line a 8 x 4 inch loaf tin.

STEP 2
In a mixing bowl, mash the bananas completely using a fork.

STEP 3
Stir in cooled melted butter and then add in the beaten egg, stirring well.

STEP 4
Stir in the sugar, vanilla extract, salt and baking soda.

STEP 5
Sift in the spelt flour to remove any lumps. However, also add in the bran that is left behind for additional fibre. Fold into the batter.

STEP 6
Add most of the chocolate chips and chopped walnuts and fold into the batter before pouring the batter into the prepared loaf tin. Top with remaining chocolate chips and chopped walnuts.

STEP 7
Bake for ~55-60 minutes at 180°C, or until a skewer inserted into the middle comes out clean.

STEP 8
Remove from the oven and allow to cool before removing from the loaf tin and slicing.
