Spice Poached Pears with Dark Chocolate

I know this one is probably a predictable sweet when it comes to dietitian desserts, but unlike sweet potato brownies and avocado mousse, this one is a tried and true classic. I love the ease and versatility of a poached pear recipe, especially on a cold winters day (though in Australia we are now entering the warmer months). And of course, it wouldn't be a skin health recipe without packing in some beneficial polyphenols from a range of spices and the dark chocolate, as well as some gut-loving fibre.

Ingredients

4 Bosc pears

3 1/2 cups water

2 strips orange zest

Whole spices ( I used cardamom, star anise, clove, cinnamon sticks and fennel seeds), quantity will depend on flavour preference

1 vanilla pod

100g dark chocolate

Method

STEP 1
In a mortar and pestle, lightly ground the spices to release the beautiful aromas and flavours.

STEP 2
Slice the vanilla pod in half and scrape out the seeds onto the knife.

STEP 3
Add water to a saucepan or pot and add in the spices and vanilla (seeds and pod), and bring to the boil, allowing the spices to infuse in the water.

STEP 4
Peel the pears, leaving the stem on, and then add to the poaching liquid, reducing the heat.

STEP 5
Cook the pears for 15-20 minutes or until they are tender.

STEP 6
Melt the dark chocolate either on the stove top using the double boiler method, or in the microwave.

STEP 7
Serve the pears on a plate and drizzle over the melted dark chocolate.
