Tuna Stew with Mashed Potato

Ingredients
4 medium sebago potatoes
4x 95g tin tuna in springwater
1 medium brown onion, finely diced
3 large garlic cloves, minced
1 large carrot, diced
1 large zucchini, diced
4 swiss brown mushrooms, sliced
2 tbsp extra virgin olive oil
4 cups chopped dark leafy greens, e.g. kale, cavolo nero, silverbeet, spinach, etc.
180g green beans, diced
4 dried bay leaves
2 tbsp dried thyme
1 cup tomato passata
1 tbsp butter
Boiling water
Salt, to taste
Pepper, to taste
Method
STEP 1
Wash and peel the potatoes and then cut them into large chunks.
STEP 2
Steam the cut potatoes for ~15-20 minutes or until very soft and mashable.
STEP 3
Whilst the potatoes are steaming, add extra virgin olive oil to a large saucepan or pot and heat slightly on medium heat.
STEP 4
Add the onion and sauté with the dried bay leaves and thyme until the onion has softened and become translucent.
STEP 5
Add the garlic and sauté until slightly browned.
STEP 6
Add the tomato passata and cook out for 3-4 minutes.
STEP 7
Add all of the chopped veggies - the leafy greens, mushrooms, zucchini, carrot and green beans, and top with boiled water to just cover the vegetables.
STEP 8
Let the vegetables cook for ~30 minutes or until softened.
STEP 9
Add the tinned tuna, stirring to combine throughout the stew and season with salt and pepper to taste.
STEP 10
Mash the steamed potatoes, add the butter and season with salt and pepper to taste, combine well.
STEP 11
Serve the tuna stew alongside or over the mash potato.
